I know this post is old, but, I recently tried to play in a 2 monitors configuration, here it's how you make it work:
If you have a Nvidia Card you can create a custom resolution for 3 monitors in the Nvidia Control Panel. In my case, I created 5760x1080 (if you create for 2 monitors the bevel of the monitors will be in the middle of the view, like in your picture). Just do not apply this resolution in windows, it won't work, Just leave it there.
Then run the game, now, in Options, Display Settings, you will have the new custom resolution as an option, set it, and also set windowed mode (this is important).
Restart the game, now, you will see a long window, you just have to place it correctly.
To do that, you can use SRWE to remove the borders, and center the window (if you want, you can also move the window manually).
It's Done.

Here is how it looks ingame, the menu navigation is terrible though, you need to permanently move the window to access the menus.
