Crni rizot
Crni rizot is a traditional Croatian dish, particularly popular on the Dalmatian coast, known as black risotto due to its distinctive color derived from cuttlefish ink.
This seafood-based dish features cuttlefish and squid, with the ink giving it a unique appearance and flavor.
The risotto is typically made with arborio or carnaroli rice, which provides a creamy texture when cooked properly.
The dish is often described as a love-or-hate experience due to its dark color and strong, briny flavor.
Some variations use baby cuttlefish for a softer texture, though they may require additional cuttlefish ink to achieve the desired color.
Crni rizot has its roots in Croatia's fishing communities, where it was created as a way to use cuttlefish ink, once considered waste, to enhance the flavor and presentation of the dish.
