For the marinade:

3 tbsps lemon juice
225g ( 8oz) yoghurt
1 tbsp ground coriander
1 tsp ground cumin
1 tsp ground turmeric
1 tsp garam masala
1/4 tsp ground mace
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp ground cinnamon
1/4-1/2 tsp cayenne pepper ( optional)
2 tsps salt
1/4 tsp freshly ground black pepper
4 tbsps olive or vegetable oil
1/2-1 tsp orange food colouring ( optional)
